If you really do want to kill a friendly character, just make sure you've expended every possible option from them, and exhausted their personal quests to leave no stone unturned. There's even a particular kindly old NPC named Emma sitting in the High Wall of Lothric that you should probably refrain from killing, unless you want to accidentally trigger an encounter best saved for much later in the game. Other merchants - like Orbeck of Vinheim, Irina of Carim, and Cornyx of the Great Swamp - will drop ashes that can be given to the handmaid to sell what they had on them, but you'll miss out on new items gained from giving them scrolls and tomes.
